This recipe is absolutely my go to for a quick and scrumptious treat. With a rich taste of dark chocolate and sweet banana, its absolutely divine. BUT!! its very crucial that the bananas are extra extra right, to get the maximum flavour.
Recipe:
Ingredients:
85g unsalted butter
85g light brown sugar
170g self raising flour 170
3 eggs
3 ripe bananas
Big handful smashed up dark chocolate
Small handful of crushed walnuts (optional)
Method:
1. Preheat your oven, 180 degrees fan.
2. Beat together the butter and sugar, add the eggs one at a time and mix well.
3. Incorporate the flour in stages, mixing each time.
4. Add the chocolate and walnuts.
5. Line a small deep baking tray or loaf tin with greaseproof paper, pour in the cake mix and gently tap on a surface to remove any air bubbles.
6. Place in the oven for 45-50 mins.
7. A good way to check if the cake is cooked, is to place a tooth pick into then centre and if it comes out clean, the cake it cooked!!
8. Allow to cool slightly if you can resist before cutting and enjoy with a nice cup of coffee!
I found that the cake will last for 3 days in an airtight container. But usually there is none left!!
