Fresh Pickled Chillis

Yes,yes and yes!!! Without question the most important essential I always have in my fridge. Its hard to describe what you can't use these with, but in simple terms, EVERYTHING! Sweet, salty with a fresh hot chilli kick adds so much to any dish and the fresh mint brings it all together. It has been said that I am a bit of a chilli addict, tabasco is great, but these are on another level. Don't be scared to try, I promise you will not regret it!


Recipe:


Ingredients:

300g mixed medium heat chillis (mainly red!)

1 handfull fresh mint

200ml white wine vinegar

250ml water

85g sugar

30g salt


You can always add more of each ingredient to get your desired taste.


Method:

1. This is super simple to make, start by thinly chopping the chillis.

2. Bring the water and vinegar to the boil, add the sugar and salt, mix well.

3. Allow the liquid to cool slightly.

4. Place the chillis and mint into a sterilized glass jar.

5. Pour the liquid into the jar, so the chillis are covered. Allow to completely cool.

6. Leave to pickle for 2 days in the fridge. Then dive in!


Excellent with grilled steak, fish, rice and so much more. The world is your chilli!!!
